Zucchini Fritters

For me, food is more than just nourishment. I eat for the sensory experience, and there's nothing I love more than hearing a satisfying "crunchhh" accompanied by an explosion of flavor. With that feeling in mind, I created this recipe.

Whether you need a side dish or a quick snack, these keto hash browns - aka zucchini fritters, are sure to make your taste buds happy. 

Zucchini Fritters

Serves 4-6 // Prep Time: 30 minutes


INGREDIENTS

2 Zucchinis, noodle-ified or grated

Pinch of Salt

½  cup Coconut flour or Almond flour

¼ cup onion, diced

1 egg

1 tbsp EVOO

Pepper, to taste

1tbsp Coconut oil for cooking


INSTRUCTIONS


In a bowl, combine zucchini and salt. Set aside for 10-15 minutes.

In the meantime, combine the rest of the ingredients in a separate bowl.

Once the zucchini has rested for 10-15 minutes, place onto a clean dish cloth or muslin cloth and wring out as much liquid as possible.

Combine zucchini with the rest of the ingredients and stir together.

In a pan, heat the coconut oil over medium heat until it flows freely.

Place golf ball sized patties onto the pan and flatten slightly.

Heat 4-5 minutes per side, until golden brown.

Serve hot!
